Berry Vegan Ice Cream

A dairy-free, vegan ice cream that is made without refined sugar & is so simple … even the kids could make this!! Enjoyed by young & old, this recipe is quick & can be enjoyed straight away, or can be served a little later after freezing if a firmer consistency is desired. Delicious on waffles, pancakes, granola (see ‘Goodness Granola’ recipe on website’) or simply served as is!
Ingredients:
3 frozen bananas (freeze for 24 hours or longer is even better)
1 tsp vanilla bean paste/vanilla
3 Tablespoons honey
1½ cups of fresh or frozen boysenberries/berry of choice
1 can coconut cream (only cream part, not liquid part)
Method:
In a food processor, place frozen bananas in the processor & blend till smooth. You may need to stop the processor a number of times to scrape down the sides. The bananas must be a creamy, somewhat whitish in appearance. Add the honey, vanilla, & cream part of the coconut cream. Blend till smooth. Lastly, add the berries & blend till the ice cream is rich in colour & the desired consistency is reached.
- This recipe can be enjoyed without the berries, & served as a plain vanilla flavor.
- If you would like to make a different frozen fruit flavour, simply omit the berries and use the same amount of frozen fruit of your choice such as mango, strawberry, blueberry etc.
- As a healthy ‘chocolate’ flavor alternative, add ‘carob’ powder to your vanilla base.
