Easy Apple Oat Bake

This is a easy great breakfast or light supper dish. It is easy enough that you can teach your child to make it.
It is a very filling, nutritious and wholesome breakfast which can be made the night before to help with the morning dash.
The walnuts in the dish serve as excellent brain power which will be needed for the days work and challenges!
You can serve this with Soya milk (or Coconut Milk or what ever kind of milk you like) or vegan yoghurt and fruit.

Ingredients:

2-2 1/2 cups rolled oats or quick oats

1 cup chopped dates or sultanas (amount depends on how sweet you like it, add more for a sweeter bake

1/2 - 3/4  cup desiccated coconut

2-3 Apples, grated (depends on the size of the apples)

2 1/2 - 3 cup soy milk

1/2 tsp salt

1/2 cup walnuts, 1/4 cup chopped and the other 1/4 cup left whole for decorating on the top

1 ripe banana (optional)

1-2 tsp vanilla

Method:

  1. Start the bake by first placing about 1 cup of the oats on the base of the dish, followed by the desiccated coconut (about 1/4 cup)

  2. Now spread your grated apple evenly on the coconut and then the chopped dates and chopped walnuts.

  3. Repeat layers until ingredients are used up but finish with coconut.

  4. Blend the banana with the soy milk, vanilla and salt and pour over the layered mixture. (The bake should be well saturated with the milk) if you let the bake stand for a while before baking, you might need to pour more milk on. If one doesn't have enough milk it will be a bit dry) Place the non-chopped walnuts on top for decorating. Can also add sunflower seeds or other nuts if desired.

  5. Bake at 180 -190’C for 35-45 minutes. Before serving garnish with sliced kiwi fruit or strawberries (whatever fruit is in season)
