Goodness Granola

Since most commercial cereals are saturated with refined sugar, ‘goodness granola’ is a nutritious, sugar free breakfast cereal that is loaded with ‘goodness’ & will kick start your day and keep you going … no need for snacking! Enjoy with seasonal fresh fruit & served with your choice of dairy-free milk, either hot or cold. Goodness granola will provide an abundance of power-packed nutrition & will leave you feeling ‘charged’ for the day ahead!

Ingredients:

 5 cups oats (rolled/oat groats)

1 cup buckwheat

1 cup coconut flakes

1 cup chopped walnuts

1 cup chopped almonds

½ cup linseed/flaxseed (ground)

1 ½ tsp salt

3 Tablespoons orange rind

1 cup dates (pitted)

¾ cup boiled water

½ cup honey/maple syrup/agave/brown rice syrup

1 tsp vanilla/vanilla paste

¼ cup coconut oil

1 tsp ground fennel

Method:

Soak dates in the boiled water for about 15 minutes till soft. Place in blender with honey, vanilla, salt, coconut oil & fennel. Blend till silky & smooth. In a separate bowl, add remaining ingredients & mix through. Add the blended mixture to the bowl of dry ingredients & stir till everything is mixed well. Spread out evenly on two baking trays lined with baking paper & bake for 100 degrees for about 2 hours, turning the granola every 20 minutes.  Once golden & somewhat crispy, remove from oven and let cool. Once granola is cooled, add 1 cup of dried fruit of your choice e.g. raisins, cranberries, chopped figs/apricots papayas,  & any seed of your choice e.g sunflower seeds, pumpkin seeds etc.

 A super healthy breakfast cereal that can be sprinkled over your dairy free ice cream (see recipe on website) or over your chia pudding or enjoyed with your favorite dairy free milk!! ‘Go for Goodness!’
