Scrambled Tofu

This is a very easy & delicious savoury breakfast option that is a wonderful alternative to using eggs. Tofu is an excellent protein source & is such a versatile food. It also contains all nine essential amino acids and is a good source of iron, calcium & other minerals. NO cholesterol and NO animal protein! An intensely healthy, plant based breakfast meal :)

Ingredients:

2 Tablespoons Rice bran oil/coconut oil

2 cloves garlic chopped

1 red onion finely sliced

1 Tablespoon fresh chopped ginger/ginger puree

2 blocks tofu crumbled

4 Tablespoons soy sauce/tamari

1 teaspoon ground turmeric

1 teaspoon of salt

2 fresh tomatoes finely diced

Method:

  1. Fry the onion, garlic, turmeric, & ginger in the oil for around 3-5 minutes or until onion is clear.
  2. Add crumbled tofu & cook for another 3 minutes stirring regularly.
  3. Add soy or tamari sauce.
  4. Serve on wholegrain toast with fresh tomatoes & a sprinkle of fresh parsley.

 

This recipe can be created with many variations. Add mushrooms, spinach, cooked potatoes, capsicum, or courgettes for a more colourful, heartier meal if so desired.
