Zesty Lemon Hummus

Hummus is a fantastic high protein food that can be used as a dip, spread, dressing & filling for many different dishes. It is a fantastic substitute for margarine on toast or bread. The chickpeas can even be sprouted for a ‘raw’ alternative. You can also be creative & experiment with colourful, tasty variations of your hummus such as beetroot, pumpkin, & a ‘mixed green’ variety that will liven up your meals & bring brilliant colour to the table.
Ingredients:
1 ½ cups chickpeas
1 large clove of garlic
2 Tablespoons olive oil
2 Tablespoons tahini
1 tsp cumin
1 cup water
1 ½ tsp salt
1 small-medium lemon + pulp
Method:
Place all ingredients in a blender & blend till smooth. Place in a bowel & garnish with the some lemon zest, black/white sesame seeds & a little olive oil.
